For those of you who still haven't seen these, Microsoft has VHDs (Virtual Hard Drives) that can be downloaded and used as a test enviroment.

This download contains a three Windows Server 2008 R2 SP1 Hyper-V Virtual Machine set for evaluating and demonstrating Office 2010, SharePoint 2010 and Project Server 2010.
The Virtual Machines contained in this package are 180 day evaluations.

This fully functional pre-configured VHD provides you a trial software will automatically expire after 30 days.
Windows Server 2008 Hyper-V is required to use this virtual machine
