Note: As someone pointed out in the comments there is an order that should be followed for a brand new install.
1.) RTM
2.) Service Pack 1
3.) Update 1 for Service Pack 1
4.) Service Pack 2
5.) Latest rollup for Service Pack 2 (at time of writing it is Rollup 5)
There is nothing publicly facing that explicitly states that rollups are cumulative but trust me when I say that they are

Rollups are cumulative so only the last Rollup
Romain is correct. If you have SP2 installed you can install the highest rollup available as they are cumulative.

For new intallation:
1) INSTALL BASE
2) SP1
3) Update 1 for SP1
4) SP2
5) Rollup 4 for SP2
Are there any definite sources that state that the update rollups are indeed cumulative? Each rollup addresses different KB issues, so I doubt that they are really cumulative
I have put all the changed files lists into Excel, if you do the same you will see that not only are all the files from older rollups in the newer ones some even stop being updated but are still included, making rollup 5 cumulative on top of SP2.
On here you can see it the files in green have stopped chaning but are still included:
